What does a Pastry Cook II do?
- Prepares dough and batter following written recipes.
- Prepares various bakery items for Wildflowers, Tavern, TS Steakhouse, Pino Bianco, Banquets and Weddings.
- Always takes a proactive approach in ensuring that food handling/quality procedures are accurately and continuously followed and in accordance with F&B procedures.
- Always maintains constant awareness pertaining to all food products within specified restaurant dessert coolers and ensures that food items are properly rotated to maintain freshness.
- Continually assists in maintaining the overall cleanliness and appearance of the kitchen and bakery areas.
- Continually demonstrates knowledge and exceptional safety standards when operating mixers, knives, dough sheeters, ovens, ranges, double boiler, sugar pots, and hot box for sugar work.
- Working knowledge of isomalt, sugar pastes, chocolate and dough for decoration.
- Thorough understanding of all mixing methods, i.e., sponge, separation foaming, creaming, etc.
- Ability to convert and proportion recipes to suit product requirements.
- Working knowledge of metric system and scaling systems.
- Continually prepares various bakery items to meet the needs of Turning Stone’s guests.
- Consistently is proactive by producing future menu items for review by Executives.
- Continually demonstrates the ability to keep work station organized to produce required quantities and quality according to assigned restaurants specifications.
- Consistently demonstrates an understanding of assisting in controlling cost by ensuring proper management of product waste.
- Always follows recipe specifications to ensure consistency.
- Always maintains a prep list of dessert components along with descriptions and photos in designated restaurant of responsibility.
- Demonstrates a thorough understanding of sanitation procedures and ensures application.
- Eliminates waste of product by using menu mix and specials to ensure food items are used to full potential.
- Assists with the creation of seasonal menus.

Work Experience To be successful as a Pastry Cook II, you'll need:
- Must be in Pastry Cook I position at least 90 days or equivalent experience.
- A.O.S. degree from a Culinary Institute is required.
- Must possess one year previous Pastry and Baking experience.
- Must possess outstanding guest service skills.
- Ability to organize/prioritize and complete multiple tasks simultaneously.
- Ability to make decisions in a stressful environment essential.
- Must be able to work nights, weekends and holidays as required.
- Must possess mathematical ability; recipes, cost out cost analysis, etc.
- Ability to read is essential; standard forms, recipes, daily paperwork.
- Ability to speak and understand the English language; must continuously communicate with a degree of professionalism and accuracy.
- Must be able to utilize mixers, dough formers, sheeters, bakery ovens and bagel formers.
- ServSafe Certification preferred.
- Position requires constant bending, pushing, pulling, kneeling, standing, walking, simple grasping, manual dexterity, reaching over the shoulder and twisting.
- Must be able to constantly lift up to 50 lbs.
- Written communication skills essential; reporting and standard forms.
